Sachie’s Chia Coconut with Sweet Mango

A lot of people are starting to be more interested in what they eat nowadays. Chia seeds is one of super foods that you can use in smoothies, salads and etc, and is becoming a popular ingredient. One of the most interesting things about chia seeds is that they change texture when you add liquid and leave them for a while. It becomes almost a smaller version of Sago/Pearl! I love the combination of this Mango chutney and Coconut Chia – hope you will love this dessert as much as I do!

Ingredients:
1 tin of Coconut Milk (425ml)
3 Tbsp Palm Sugar (light)
pinch of salt
5 Tbsp Chia seeds

1 Mango, cut into cubes
2 Tbsp sugar
1-2 star anise
2 Tbsp water
1/2 – 1 lime, squeeze the juice

Method:
1. Put coconut milk and palm sugar into a small pot and bring to the boil. Just before it starts to bubble, remove from heat and add a pinch of salt and the chia seeds. Stir a couple of times and pour into glasses of your choice.
2. Once they are cooled down, keep them in the fridge till you serve.
3. To make spicy mango, put chopped mango, sugar, star anise and water into a small pot and bring to boil. Reduce heat to medium high and cook for 1-2 minutes and remove from heat and add lime juice. Once cooled down, keep this in the fridge till you require.
To assemble, scoop the spicy mango on top of the Chia coconut and garnish with mint leaves if you have 🙂
