Aunty’s Chai Tea


 

I had thought the weather is getting warmer, and all of sudden now we have heavy rain in the middle of the day … typical Auckland weather.  However in the spirit of finding positives, when the weather is like this, I love to go to the kitchen and open my pantry to make a nice Chai tea – the recipe is from one of wonderful staff Deepika’s aunty in India. I love the smell of spice – very therapeutic!

 

Makes:      2 cups

Time:      5-7 minutes

 

Ingredients:

2 black tea bags (I use English Breakfast)

1 cup of milk

4 cloves

3-4 green cardamom, crashed at the back of knife

2-3 slices of fresh ginger

1 1/2Tbsp white sugar (adjust to your taste)

 

Method: 

  1. Bring a cup of water (250ml) to boil in a small sauce pan
  2. Add clove, cardamom, ginger and tea bags and boil for 2-3 minutes
  3. Add milk and bring to boil. Keep boiling for a couple of minutes to cook the tea well (keep stirring as it will overflow)
  4. Turn off the heat and use a sieve to remove the spices and pour the tea into cups
