For every Asian country that I visit, I always have a favourite noodle dish from there – and of course, for Thailand that could only be Pad Thai. I have learned how to cook this years ago in Bangkok, and I was pleasantly surprised on how a dish could be so delicious and, yet, so simple to cook once you know the right tricks and tips and the perfect balance of flavours.
