
Summer Rolls
I adore these summer rolls because they are healthy, easy to make and everyone loves them! They remind me of visiting Hoi An, where I remember making these delights in a friend’s home for a party. Even better, you can use any fresh produce and protein of your choice! Try to use what is in season so that the produce is fresher and less expensive. PS: Don’t worry about ripping the rice paper (it happens to everyone), so I've included 3 more sheets in case of any mistakes. Happy rolling!

What's Included in the Kit
- Rice Paper
- Vermicelli
- Shallots
- Sachie Dipping Sauce
What you'll Need
- 20 Prawn Cutlets
- 1 Small Carrot
- 1/4 Fancy Lettuce
- Fresh Coriander
Ingredients
Rice Paper [tapioca starch, rice, salt], Vermicelli [arrowroot, tapioca starch, salt], Sauce [Rice Vinegar [naturally brewed vinegar (water, alcohol (<0.5%)), acidity regulator (260), rice], Fish Sauce [fish, salt, sugar], Brown Sugar, Crushed Garlic [acidity regulators (330, 300), preservative (202)], Chilli], Fried Shallot.

Tips & Tricks from Sachie
- Get your kids or friends involved in making these and you can shorten your time!
- Don’t use wooden chopping boards when you start rolling, as they will stick! Tip – use a plate or non-wooden surface!
- I have provided a few extra rice papers – just in case if you rip when you first practise!
- Instead of using prawns, you can also use poached chicken / pork.
